Moonshine Chicken Marinade

Ingredients:
1 46-ounce can pineapple juice
3 cups moonshine (or cooking sherry)
7.5 ounces soy sauce
1 cup granulated sugar
4 ounces Rose’s lime juice
6 or 10 ounces chicken parts
Method:
- Mix first five ingredients together
thoroughly. Pour over chicken.
- Let 10
ounces chicken marinate 48 hours and 6
ounces chicken 24 hours.
- Grill on medium
heat 35 minutes with covered lid,
turning once.

Maple Butter

Ingredients:
1 pound butter
1/2 pound dark brown sugar
1 ounce maple extract
1/2 teaspoon cinnamon
pinch nutmeg
pinch allspice
salt to taste
Method:
- Place butter in mixer and mix on low speed.
- Slowly add
sugar and spices.
- When well blended, increase speed to
medium; scrape sides of bowl first. Whip until light and fluffy.
- Transfer into large container, label and date. Refrigerate.
- A
great accompaniment for muffins, pancakes and other hot
breads.
